Rice and Peas

Rice and peas, or peas and rice, is a traditional rice dish found in some Caribbean and Latin American countries, typically prepared with kidney beans, called red peas or red beans, and similar varieties across the Greater Antilles and coastal Latin America, though sometimes made instead with pigeon peas, called gungo peas by Jamaicans. Recipes vary throughout the region, with each country having its own way of preparing the dish and its own name for it, combining legumes and rice with herbs, spices and often coconut milk.
