Silpancho

Rice, Grain and Starch Dishes

Silpancho, from the Quechua sillp'anchu, is a popular Bolivian dish from the city of Cochabamba, built from a base of white rice topped with boiled sliced potatoes, a thin breaded and pounded meat cutlet and chopped tomato, then finished with chopped onion, beet and parsley and one or two fried eggs.
