Coconut oil, or coconut fat, is an edible oil derived from the meat of the coconut palm's fruit, a white solid fat below around 25 degrees Celsius and a clear, thin liquid at higher temperatures, with unrefined varieties carrying a distinct coconut aroma. Used both as a food oil and in industrial applications such as cosmetics and detergent production, coconut oil is rich in medium-chain fatty acids, though its high levels of saturated fat lead numerous health authorities to recommend limiting its consumption as a food; it is widely used for cooking and baking owing to its high smoke point and distinct flavor.
