Rice, Grain and Starch Dishes

Berkoukes, also called berkoukech, aich or avazine, is a traditional North African dish especially popular in Algeria, Tunisia and parts of Morocco. It is made from large, hand rolled semolina pasta pellets often compared to pearl couscous or fregola, and is typically cooked with vegetables, legumes and aromatic spices.
