Ghapama is an Armenian dish of a whole pumpkin hollowed out and stuffed with cooked rice, butter, honey, dried fruits such as figs, apricots, prunes and raisins, and nuts such as walnuts and almonds, sometimes with meat, then baked and usually served as a dessert. Pumpkins reached Armenia from the Americas in the 19th century and were fully naturalized into Armenian cuisine alongside other New World crops such as potatoes and tomatoes. Ghapama is traditionally served at autumn harvest celebrations as well as Christmas, New Year, Easter and weddings, and is celebrated in an Armenian folk song called Hey Jan Ghapama.
