Sholezard

Rice, Grain and Starch Dishes

Sholezard is a saffron-yellow Iranian rice pudding made with rice, sugar, rose water, butter, cinnamon and cardamom, typically finished with a garnish of cinnamon, almonds and pistachios. It achieves a creamy, smooth consistency without using any cream or milk. The dessert carries religious and seasonal significance in Iranian cuisine, prepared and distributed in large quantities at religious ceremonies and especially used to break the daily fast during the month of Ramadan. It is also known by the alternate names zard birinj, zard berenj or zarda.
