A California roll, also called California maki, is a sushi variety made with imitation crab, avocado and cucumber, sometimes with crab salad in place of crab stick. In the United States it is typically prepared as uramaki, an inside-out roll with the rice on the outside sprinkled with toasted sesame seeds or roe, while versions outside the United States more often follow the traditional futomaki style with the nori seaweed wrapped on the outside.
