Pichi-pichi is a Filipino dessert made from cassava, believed to have originated in Quezon province around the Pahiyas Festival in the town of Lucban. Grated cassava is combined with water, sugar and lye, often flavored with pandan leaves, then poured into pans or molds and steamed until soft, after which the pieces are rolled or topped with grated coconut, cheese or the coconut caramel called latik; food coloring is sometimes added before steaming. The name is thought to come from the Araucanian word pichi, meaning small, used by Spanish Americans in the nineteenth century.
