Tibok-tibok

Rice, Grain and Starch Dishes

Tibok-tibok, also called carabao-milk pudding, is a Pampangan dessert pudding made primarily from carabao, or water buffalo, milk and ground soaked glutinous rice known as galapong. Originating in the Philippine province of Pampanga and especially popular in Cagayan, it has a soft, jelly-like texture and a delicate sweet and slightly salty flavor, and is topped with latik, or coconut milk curds, before serving. Its own source notes it resembles maja blanca, though that dish is made with coconut milk and cornstarch instead.
