Ukwa

Ukwa is a traditional food of the Igbo people of southeastern Nigeria made from the edible seeds of the African breadfruit tree, Treculia africana. The seeds can be eaten fresh or roasted but are most often prepared as a porridge cooked with potash, known locally as ankawu, palm oil and seasonings such as utazi leaf, onion, crayfish, dried fish and pepper. It is served warm and is valued as a source of protein, carbohydrates and vitamins.
