Keshi yena

Roasted, Grilled and Fried Dishes

Keshi yena is an Aruban and Curacaoan main course consisting of a large round ball of cheese stuffed with spiced meat, served steamed or baked. The dish is believed to have originated among enslaved people of the Dutch West Indies, who stuffed leftover rinds of Gouda or Edam cheese with meat table scraps; its name comes from the Papiamento rendering of the Dutch word for cheese, kaas. Modern recipes typically add olives, raisins, and chicken to the stuffing, and while some cooks bake keshi yena in ramekins, others follow the traditional method of baking it in an empty sausage can or wrapping the cheese in plantain leaves.
