Café liégeois is a French cold dessert made from lightly sweetened coffee, coffee-flavored ice cream and Chantilly cream, assembled in a chilled glass and often garnished with crushed roasted coffee beans; a chocolate variant substitutes chocolate ice cream. Despite its name, the dessert did not originate in Liège, Belgium: it was first known in France as café viennois, or Viennese coffee. When Belgium resisted the German invasion of 1914 for twelve days, France renamed the dessert café liégeois in tribute, since Vienna was by then the capital of an enemy power. The name first appeared in print in the 1938 edition of Larousse Gastronomique, though recipes for iced coffee desserts existed at least as early as Auguste Escoffier's 1907 Guide Culinaire.
