Raclette is a dish of Swiss origin, also popular elsewhere, based on heating cheese and scraping off the melted part, typically served with boiled potatoes. It historically originates from the canton of Valais in Switzerland, whose raclette cheese carries a protected AOP designation and is also marketed as a Swiss-type cheese specifically for this dish.
