Filet americain

Salads, Dips, Sandwiches and Fermented Cold Dishes

Filet americain is a Belgian dish of raw beef closely related to steak tartare, made from finely minced or ground lean beef served plain or seasoned with ingredients such as egg yolk, mustard, Worcestershire sauce, capers, shallots and parsley. Belgian usage distinguishes between filet americain nature, seasoned at the table, and filet americain prepare, seasoned before serving. In the Netherlands the prepared version is used mainly as a spreadable sandwich filling, while in Belgium it is also served as a starter or main course, often with fries.
