Papa a la Huancaína

Papa a la huancaína, literally Huancayo style potatoes, is a Peruvian appetizer of boiled potatoes served in a spicy, creamy sauce of queso fresco cheese, sautéed or grilled ají amarillo pepper, red onion and garlic, traditionally ground in a batán. Though named for the highland city of Huancayo, it has become a staple across Peru, usually served cold over lettuce leaves and garnished with black olives, corn kernels and hard boiled egg.
