Tavukgöğsü

Tavukgogsu is a Turkish milk pudding made with finely shredded chicken breast, its name meaning chicken breast in Turkish. Boiled chicken breast is separated into very fine fibers, then blended with milk, sugar and rice flour or another thickener and often flavored with cinnamon, producing a thick, sweet pudding. Its precise origin is debated; earlier theories attributing it to Roman recipes have been largely discredited, and food historians now consider an Arab origin more likely than a Byzantine or Roman one, with similar desserts entering multiple cuisines through Arab influence around the tenth century. The dessert was historically served to Ottoman sultans at Topkapi Palace and remains part of Turkish cuisine today.
