Bingsu

Bingsu is a milk-based Korean shaved ice dessert topped with sweet ingredients such as chopped fruit, condensed milk, fruit syrup, tteok, or red beans. Its roots trace to the Joseon period, when crushed ice desserts made with fruit were distributed from ancient Korean ice storage facilities called seokbinggo. The most popular variety, patbingsu, is named for its main topping of sweetened red beans. Traditional preparation shaved natural ice with simple plane-like tools; today electric ice shavers are standard, and many modern versions freeze milk itself rather than shaving plain water ice. Ingredients introduced after the Korean War, including condensed milk, chocolate, cereal, ice cream and whipped cream, have expanded the range of toppings available.
