It originated in New Mexican cuisine before spreading through Southwestern and Tex-Mex cooking, with the Southwestern style commonly filled with scrambled eggs, potatoes, beans, cheese, peppers, salsa, onions, chorizo, bacon, or sour cream, and regional versions sometimes adding tomatoes, ham, or other fresh ingredients.
