Algerian Cuisine

Northern African Cuisines

Algerian cuisine represents the culinary traditions of Algeria, shaped by centuries of cultural exchange and blending Arab, Berber, Turkish and European roots across the country's Mediterranean history. It centers on bread, meat, chiefly lamb, beef or poultry, olive oil, vegetables and fresh herbs, with pork forbidden under Islamic dietary law, and vegetables such as potato, carrot, tomato, zucchini, eggplant, chickpea and olive feature prominently in salads, soups, tajines, couscous and sauced dishes. Mutton is the most commonly eaten meat, with poultry and beef also regular fare, and seafood including sardine, hake, shrimp, tuna and cod reflects the country's coastline, while spicing draws heavily on cumin, cinnamon, turmeric, paprika and saffron, including blended mixtures such as ras el hanout. Couscous stands as Algeria's most celebrated dish and its national culinary icon, typically served with vegetables and meat in a savory sauce.
