Dressed herring, informally called shuba or herring under a fur coat, is a Soviet era layered salad of diced herring topped with layers of grated boiled egg, potatoes, carrots and beetroot, chopped onion and mayonnaise, with some versions adding grated apple. The final layer of grated beetroot covered in mayonnaise gives the dish its characteristic purple color, often finished with grated egg white and yolk for decoration. It remains widely popular across Eastern Europe and the former Soviet states as a festive appetizer for New Year and Christmas, particularly in Russia, Belarus, Ukraine, Kazakhstan and Kyrgyzstan, and is known in Poland as sledz pod pierzynka.
