Bombay Sandwich

The Bombay sandwich is a vegetarian street sandwich from Mumbai made of buttered white bread spread with green chutney and filled with boiled potato and raw vegetables such as onion, cucumber, tomato, beetroot and capsicum, often toasted and topped with grated cheese or sev. Food writers trace its invention to migrant textile workers in 1960s Bombay who needed cheap, filling meals, blending the British sandwich with ingredients introduced under Portuguese and British colonial rule. It became widely popular in the 1980s and 1990s as the first Indian sandwich with broad appeal, though it remains best known within Mumbai itself.
