Khao Kha Mu

Stews, Braises and Sauced Dishes

Khao kha mu is a popular Thai dish of stewed pork knuckle served over steamed rice, reflecting the influence of Teochew Chinese cuisine. The pork is braised in a condensed, sometimes cocoa or peanut flavored pottage, and served with a half spiced corned egg, pickled mustard greens, blanched Chinese broccoli, fresh bird eye chilies and garlic, alongside a dipping sauce of chili, garlic, salt, lime juice and vinegar. It is widely sold from Thai street stalls to upscale restaurants, including a Bang Rak establishment that earned a Michelin Bib Gourmand in 2018 and 2019.
