Sopaipilla

Roasted, Grilled and Fried Dishes

A sopaipilla is a fried pastry and a type of quick bread served in several regions with Spanish heritage across the Americas. It is traditionally made from a leavened wheat dough mixed with masa harina and shortening, then rolled out, cut into shapes and deep fried until it puffs up with a hollow center. Its name traces back to a Mozarabic root meaning bread soaked in oil. Preparation varies widely by region: some versions are stuffed and served as a main course, others are a dessert topped with honey or sugar, and in Chile sopaipillas are often served with a savory sauce called pebre.
