Stroopwafel

Roasted, Grilled and Fried Dishes

A stroopwafel is a thin, round Dutch biscuit made of two layers of sweet baked dough held together by a treacle or syrup filling, often caramel. It was first made in the city of Gouda, in the Dutch province of South Holland, and has become a well known Dutch treat eaten throughout the Netherlands. The wafers are pressed from a stiff dough in a hot waffle iron until crisp, and while still warm the edges are trimmed with a cookie cutter so the wafer can be split into a top and bottom layer; a warm filling of syrup, brown sugar, butter and cinnamon is spread between the two layers before they are pressed back together, hardening as it cools to bind the halves into one biscuit.
