Lohikeitto, or salmon chowder, is a traditional Nordic soup common in Finland and other Nordic countries, known as laxsoppa in Swedish. Salmon fillets are simmered with boiled potatoes, carrots and leeks, and the soup is finished with cream or whole milk, giving it a creamy texture and flavor that place it closer to a chowder than a light broth. It is served hot and seasoned with fresh dill, allspice, salt and black pepper.
