Bazin

Breads, Flatbreads and Savory Pastries

Bazin is an unleavened bread of Libyan cuisine made from barley or wheat flour boiled in water with salt and beaten into a dense dough with a wooden stick called a magraf, giving it a paste like, hardened texture. It is shaped into a dome and served with a meat and potato stew or tomato sauce, garnished with hard boiled eggs, and eaten by hand. Considered a national dish of Libya, it is also found in Tunisian cuisine.
