Cheese straw

Cheese straws are a traditional snack or appetizer of England and the Southern United States, made as cut strips or pressed with a cookie press from a dough of butter, flour, salt, cheddar cheese, and cayenne pepper. Variations use different cheeses, spices, and nuts. An early version appeared in Mrs. Beeton's Book of Household Management under the name cayenne cheese fingers.
