Goshtaab, also spelled gushtaba, is a Kashmiri dish of large meatballs made from finely minced mutton combined with yogurt and aromatic spices, cooked in a yogurt based gravy. It is considered the final and most prestigious course of wazwan, the elaborate multi course feast of Kashmiri cuisine, sometimes called the king of the wazwan. Its culinary roots are traced to Central Asian, Persian and Mughal influences, with the Mughal era introduction of meat based dishes to Kashmir credited with shaping the dish into its present form using local spice blends and techniques.
