Spinach soup is a soup prepared using spinach as its primary ingredient, spanning many regional and stylistic variations rather than one fixed recipe. It is commonly made with onion, green onion, carrot, celery, tomatoes, potatoes, lemon juice, olive oil and seasoning, with the spinach used whole, pureed or chopped and fresh, canned or frozen spinach all workable; it can be prepared broth-based or cream-based, the latter known as cream of spinach soup, and served hot or cold, often garnished with sour cream or creme fraiche. Regional versions include a Chinese spinach-and-tofu soup known as emerald and white jade soup, the Korean spinach soybean-paste soup sigeumchi-doenjang-guk, and an Eastern European green borscht made with spinach and potatoes.
