Soups and Broths

Zosui, also known as ojiya, is a mild and thin Japanese rice soup similar to a rice based vegetable soup. It is made from pre-cooked rice and dashi or water seasoned with soy sauce or miso, cooked together with other ingredients such as meat, seafood, mushrooms and vegetables. It is generally served to people who are sick or feeling unwell and is usually served only in winter.
