Flaki is a traditional Polish beef tripe stew, ranked alongside bigos, zurek and pierogi among the country's best-known dishes. It has been eaten in Poland since at least the fourteenth century and was historically favored by Polish royalty. Beef tripe is simmered with beef, beef broth, bay leaf, allspice, parsley and carrot, and seasoned with salt, pepper, nutmeg, paprika and marjoram; regional versions, such as the Warsaw style, add tomato concentrate or meatballs. Flaki is traditionally served as one of the hot dishes at Polish weddings, eaten with fresh bread or served in a bread bowl, and premade versions are now sold widely in cans and jars.
