Gulyasleves

Soups and Broths

Gulyasleves is a Hungarian soup of beef, vegetables, ground paprika and other spices, its name combining the Hungarian words for herdsman, gulyas, and soup, leves. It developed among the cattlemen who drove herds across the Great Hungarian Plain and needed portable food that could be cooked in a single cauldron, called a bograc, over an open fire, and it began as a stew rather than a soup. As it spread from peasant kitchens into urban restaurants its preparation shifted toward a soupier consistency, and Hungarians today distinguish between gulyas, the stew, and gulyasleves, the soup, the difference coming mainly from how much water is used; core ingredients include onions, peppers, tomatoes, meat, garlic, caraway seeds, potatoes and homemade noodles called csipetke.
