Menudo

Soups and Broths

Menudo, also known as mondongo, pancita or mole de panza, is a traditional Mexican soup made with beef tripe in a broth built on a red chili pepper base. It is the Mexican variation of the Spanish dish callos, and similar tripe soups exist elsewhere in Latin America and Europe, including sopa de mondongo, guatitas and dobrada in Latin America, trippa alla romana in Italy and patsas in Greece.
