Sopa de mondongo

Sopa de mondongo is a soup originating in Latin America, made from diced tripe, the stomach lining of a cow or pig, slow cooked with vegetables such as bell peppers, onions, carrots, cabbage, celery, tomatoes, cilantro, garlic, and root vegetables. The dish is generally prepared in former Spanish colonies across Latin America and the Caribbean, as well as in the Philippines.
