Corned beef is beef, most often brisket, that has been cured in a brine containing large grains of salt, historically called corns of salt, from which the product takes its name. The curing process, often including sodium nitrite, gives the meat its characteristic pink color and tangy, salty flavor, and the beef is typically boiled or braised until tender rather than roasted. Corned beef is closely associated with Irish American cuisine, especially the dish corned beef and cabbage, and it is also a defining ingredient of the New York style Reuben sandwich and of canned corned beef products distributed worldwide.
