Coto makassar

Soups and Broths

Coto Makassar, also called Coto Mangkasara in Makassarese, is a traditional Indonesian soup that originated in Makassar, South Sulawesi. It is a variant of soto, traditionally made from beef and offal in a seasoned broth of ground peanuts and spices. Its main ingredient is beef, which can be combined with innards such as intestine, liver, lungs, heart, tripe or cow brain, and its spices both flavor the dish and balance the richness of the meat.
