Eru

Soups and Broths

Eru is a Cameroonian vegetable soup associated with the Bayangi people of the Manyu department in the country southwest, made from the finely shredded leaves of the eru or okok plant. It is cooked with waterleaf or spinach, palm oil, crayfish and a protein such as smoked fish, cow skin (kanda) or beef, and is traditionally eaten with fermented water fufu or garri.
