Champon

Noodle and Dumpling Dishes

Champon is a noodle soup of Nagasaki, Japan, blending Japanese and Chinese cooking, made by frying ramen noodles, pork, seafood and vegetables in lard, combining them with a broth of chicken and pork bones, and boiling everything together in a single pan. It was created in the late nineteenth century by Chikusa Shokai and first served at the Shikairo restaurant, founded in Nagasaki in 1899, drawing on Fujian cuisine though scholars debate its exact ancestor dish; it arose to give Chinese students studying in Japan during the Meiji era an affordable, filling meal.
