Litti is a wholewheat flour dough ball stuffed with a spiced mixture of roasted black chickpea flour called satu, then roasted on hot charcoal or fire, though it can also be baked or cooked on a tava. Served together with chokha, a mashed vegetable side, litti forms a complete meal popular in the Bhojpuri region of eastern Uttar Pradesh, Bihar, Jharkhand, and Madhesh, and it is also a common street food in small towns and cities that has gained international recognition.
