Bagara khana, also called bagara annam, is a spiced rice dish prepared in Hyderabad, Telangana, India, in which bagar, or tempering, is applied to a plain biryani-style recipe made without vegetables or masala powders. It is made from basmati rice, spices and green chillies, served hot, and is popular at weddings and functions in the region, serving as a primary entree for vegetarians there. It is often paired with spicy curries such as baghara baingan or dalcha.
