Cauliflower cheese

Stews, Braises and Sauced Dishes

Cauliflower cheese is an English dish of boiled cauliflower covered in cheese sauce, typically made with cheddar, though Stilton or Swiss cheese appear in some versions. More elaborate preparations add nutmeg and English mustard, and are topped with cheese or breadcrumbs before baking. Cauliflowers arrived in England in the 17th century, and this preparation is believed to date from around that period. In the United Kingdom it usually appears as a side dish with a Sunday roast, though it can also serve as a vegetarian main course, and it is often compared to macaroni and cheese in the United States; a similar dish is made in northern Italy as cavolfiore al gratin.
