Avial is a dish from Kerala in southern India, a thick stew of vegetables, commonly around thirteen kinds found in the Western Ghats such as elephant foot yam, plantain, carrots, beans, brinjal, cucumber, drumstick pods and snake gourd, cooked with coconut, coconut oil and curry leaves, with curd or a souring agent such as raw mango or tamarind sometimes added. It is considered an essential part of the Kerala meal and often a centerpiece of the traditional feast known as sadhya, with regional versions ranging from a thinner gravy in Central Travancore to additions of bitter gourd around Kozhikode or tomato around Kollam.
