Sai bhaji is a vegetarian curry from Sindhi cuisine made by cooking lentils together with spinach and other vegetables such as brinjal and potato, seasoned with cumin seeds, ginger, garlic, onions, tomatoes, turmeric, coriander and chili. It is a household dietary staple valued for the nutritional content of its leafy greens, and remains popular in Pakistan and India as well as among Sindhi diaspora communities.
