Shukto is a Bengali vegetable dish, popular in the West Bengal state of India and in Bangladesh, usually served with rice and known for a slightly bitter taste drawn from ingredients such as bitter gourd, drumstick, plantain, eggplant, potato and mustard paste. It is frequently served at Bengali religious and social banquets, including annaprasana, sraddhya and wedding ceremonies, as part of a traditional Bengali thali, and its custom of opening a meal with a bitter dish traces to ancient practice in the historic Bengal kingdoms.
