Ayam pansuh

Ayam pansuh, also called manok pansoh, is a traditional dish of the indigenous Dayak peoples of West Kalimantan, Indonesia, and Sarawak, Malaysia, made by cooking chicken with garlic, red onion, lemongrass, galangal, ginger, bungkang or salam leaves, and red chilies inside a bamboo stalk filled with water and seasonings, covered with tapioca leaves from the cassava plant. It is frequently served to guests in Sarawak, particularly during ethnic festivals.
