Bicol express, known natively in Bikol as sinilihan, is a Filipino dish popularized in the Malate district of Manila but made in traditional Bicolano style. It is a stew made from long or small chili peppers, coconut milk or coconut cream, shrimp paste or stockfish, onion, pork, ginger, and garlic. The dish was named by Laguna resident Cely Kalaw during a 1970s cooking competition in Malate, after the Bicol Express railway train that ran from Tutuban in Manila to Legazpi in the Bicol region.
