Krechek

Krechek, also spelled krecek, is a traditional Javanese cattle skin spicy stew from Yogyakarta and Central Java, Indonesia. While traditionally made from the soft inner skin of cattle, its own source notes that the most common recipe today instead uses readily available rambak, or krupuk kulit, cattle skin crackers, cooked in a spicy coconut milk stew with diced potatoes and fried soybeans and a heavy dose of red chili peppers. The crackers absorb the coconut milk and spices as they cook, becoming moist, and the finished dish has a soft, rich, and spicy character with a reddish orange color; some variations add cow liver or tofu.
