Pares, also called beef pares, is a Filipino meal of braised beef stew served together with garlic fried rice and a bowl of clear soup, closely associated with roadside diner style restaurants known as paresan. It was created in Quezon City in 1979 by Lolita Tiu, and its name, meaning pairs, refers to pairing beef asado with garlic fried rice, called sinangag, and a light beef broth to make a complete meal. Variations include pares kanto, a street corner style, and pares mami, served with egg noodles.
