Butternut squash, known in Australia and New Zealand as butternut pumpkin, is a type of winter squash, Cucurbita moschata, that grows on a vine. It has tan-yellow skin and orange flesh that deepens in color as it ripens due to its beta-carotene content, and a sweet, nutty flavor when cooked, similar to pumpkin. It is used in soups, roasted dishes, purees and baked preparations.
