North African cuisine rests on a Berber, or Amazigh, base later layered with Arab influence following the seventh and eighth century conquests, which brought Islam, Arabic and an expanded spice repertoire. The Levantine Arab world came to know North African cooking as a recognizably distinct tradition, calling couscous moghrabiyyeh, literally the North African dish, by the thirteenth century. Olive cultivation reaches back to Roman antiquity in the region, while chili pepper, the base of harissa, is a comparatively recent, post fifteen hundreds arrival tied to the wider Columbian Exchange.
